Homemade yogurt sets up in two very different ways depending on the culture. Standard yogurt culture (a thermophilic blend of Streptococcus thermophilus and Lactobacillus bulgaricus) needs real heat, 105-115°F, and works fast: University of Missouri Extension's home yogurt guide targets 108-112°F and gets a set custard in about 4 hours, with longer holds past that producing a more tart, acidic flavor. Room-temperature cultures like viili or filmjolk are mesophilic. They culture at 65-80°F with no heat source at all, but take much longer, typically 12 to 24 hours, and stay comparatively mild even when left the full stretch.

This tool starts from a base incubation time for each culture at its documented sweet spot (110°F for thermophilic, 72°F for mesophilic), then shortens or lengthens that estimate based on how far off your actual temperature is. Warmer than the sweet spot speeds the bacteria up, cooler slows them down. That temperature adjustment is our own reasonable interpolation, not a number pulled from a fermentation kinetics study, so we clamp every result to the documented 4-12 hour window for thermophilic batches and 12-24 hours for mesophilic ones. Why is my yogurt thin or runny even after the full incubation time?

Temperature that's too low for the culture type is the most common cause, since the bacteria simply work more slowly and don't build up enough acid to fully set the milk in the expected window. Milk protein content matters too, whole milk or milk with added powdered milk sets firmer than low-fat milk with less protein to structure the gel.
