Cheese aging (affinage) timeline calculator
Affinage, the aging of cheese after it's made, is where a lot of home cheesemaking actually goes wrong, not in the make itself. Different cheese families need very different aging windows and milestones along the way, and pulling a wheel too early or letting it go too long can undo a good make. This calculator covers eight distinct cheese families, more than most guides bother to break out, and gives you a real timeline with milestones to check against, not just a single end date.

White bloom appears
The Penicillium candidum coat should show as a thin, even white fuzz over the whole surface. Uneven or blue-grey patches this early usually mean the room is too dry.

Rind thickens, paste starts to soften
The rind gets denser and slightly wrinkled. Press gently near the edge, you should feel the paste just starting to give.

Ready to eat
Ripening runs from the outside in. At this point the paste should be soft and a little runny near the rind, firmer toward the center.

How this is calculated
Aging time depends on which family a cheese belongs to, not just how big the wheel is. Fresh cheeses like chevre or ricotta have no rind to protect them and are best eaten within a couple of weeks. Bloomy rind cheeses such as Brie ripen from the outside in over three to eight weeks as their Penicillium candidum coat matures. Washed rind styles need regular brine washing over four to twelve weeks to build their sticky, pungent rind. Semi-hard cheeses like Gouda and young cheddar run two to twelve months as moisture slowly leaves the paste, and hard grana-style cheeses like Parmesan need ten months to three years for the same process to finish, which is also why real Parmigiano-Reggiano can't legally be sold under twelve months old.

What humidity should I actually be holding during aging?

My cheese has mold on it that isn't part of the recipe, is it ruined?
Not automatically. Hard cheeses with a natural rind can often have unwanted surface mold wiped off with a vinegar or salt-brine cloth without harming the interior, since the rind is a barrier the mold hasn't penetrated yet. Soft, high-moisture cheeses are much less forgiving, unexpected mold on a fresh or bloomy-rind cheese is a bigger concern since there's no dense rind protecting the paste.
Can I age cheese in a regular refrigerator instead of a wine fridge?
A standard fridge runs both too cold and too dry for most aging cheese, typically 35-38°F and under 50% humidity, versus the 50-55°F and 85-95% humidity most recipes call for. A cheese cave setup, even a simple converted mini fridge with a temperature controller, gets you much closer to the real target than a kitchen fridge will.
